Warm Red Cabbage Salad

Once you've made blue eggs or tofu, don't waste the cabbage - try this delicious warm salad.

Ingredients

Red cabbage 1/2
Gherkins 30-40g
Soy sauce 1.5 tbsp
Sugar 1 tbsp
Vinegar 2 tbsp
Sesame oil 2 tbsp
Sesame seeds 2 tbsp
Pine nuts 2 tbsp

Method

Cut the red cabbage into half and chop to large chunks. Boil for 5 minutes in lots of hot water.

Transfer to a colander and drain with a bowl under it to keep the liquid.

If you soak boiled eggs for 2 hours in the hot liquid, it will look like this.

Soaked tofu for 2 hours will look like this.

Put the soy sauce, sugar and vinegar in a small bowl and mix well until the sugar dissolves. Add the boiled cabbage and mix well. Add the chopped gherkins and mix.

Drizzle with sesame oil, sprinkle with sesame seeds and pine nuts and mix before serving.

Tips & Note
